Delicious Oreo Ice Cream Cake

As a tradition in my family, I make all the birthday cakes for all the children and adults who request them. I love baking all of their cakes from scratch and I make sure that they get the flavors and colors that they all want. This year my 13-year-old nephew requested an ice cream cake. I had never made one before but I’m always up for a culinary challenge. Since my nephew is constantly eating Oreos and ice cream I thought why not make an ice cream Oreo cake for him?

Turns out it was a giant hit! He loved it and wanted to eat it all. Unfortunately, I took it home and accidentally left it in the back seat of my car. I will have to redo it again next year. This recipe is quite a simple one and really is an easy make for any kid’s birthday! Enjoy!

Delicious Oreo Ice Cream Cake

Equipment

  • 1 Food Processor or Plastic Bag
  • 1 Spring Form Pan or Regular Pan
  • Parchment paper
  • Plastic Wrap or Aluminum Foil
  • 1 Spoon or Spatula

Ingredients
  

  • 24 Oreo Cookies (Crushed)
  • 1/4 Cup Unsalted Butter(Melted)
  • 1.5 Quarts Vanilla Ice Cream (or any flavor you prefer)
  • 1 Cup crushed Oreo cookies (for layering)
  • 1 Cup whipped cream or whipped topping
  • Chocolate sauce or hot fudge (optional for topping)

Instructions
 

  • Take 24 Oreo cookies and crush them into fine crumbs. You can use a food processor or place the cookies in a plastic bag and crush them with a rolling pin. Mix the crushed cookies with melted butter until well combined.
  • Press the crushed Oreo mixture into the bottom of a 9-inch springform pan or a regular cake pan lined with parchment paper. Press it firmly to form an even crust. Place the pan in the freezer for about 15-20 minutes to set.
  • While the crust is setting, allow the ice cream to soften at room temperature for a few minutes until it's easy to spread but not completely melted.
  • Take the pan out of the freezer and spread half of the softened ice cream over the Oreo crust layer. Sprinkle a cup of crushed Oreo cookies evenly over the ice cream layer.
  • Spread the remaining ice cream on top of the crushed Oreo layer, creating an even layer.
  • Cover the pan with plastic wrap or aluminum foil and freeze the cake for at least 4 hours or until firm.
  • Before serving, take the cake out of the freezer and let it sit at room temperature for a few minutes to make it easier to slice.
  • Once ready to serve, carefully remove the cake from the pan. You can run a warm, damp cloth around the edges of a springform pan to help release the cake.
  • Top the Oreo ice cream cake with whipped cream or whipped topping. Optionally, drizzle chocolate sauce or hot fudge over the cake for an extra decadent touch.
  • Slice and serve the delicious Oreo ice cream cake immediately.

Notes

I made this for my nephew’s 13th birthday and he loved it! There’s nothing a teen boy loves more than icecream and Oreos so why not put those together?
