Here’s a great simple recipe for a delicious strawberry shortcake! Enjoy some delicious juicy strawberries and a biscuit.
Strawberry Short Cake
Equipment
- 2 Mixing Bowl
- Pastry cutter
- 1 Rolling Pin
Ingredients
- 2 cups All-Purpose Flour
- 2 tsp Baking Powder
- 2 tbs Sugar
- 1/2 tsp Salt
- 1/2 cup Unsalted Butter, Cut into small pieces
- 2/3 cup Heavy Cream
- 1 tsp Vanilla Extract
- 2 pints Strawberries sliced
- 2 tbsp Sugar
- Whipped Cream (optional)
Instructions
- Preheat the oven to 425°F.
- In a large bowl, mix together the flour, baking powder, 2 tablespoons of sugar, and salt.
- Cut in the butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the heavy cream and vanilla extract and mix until just combined.
- Turn the dough out onto a floured surface and gently knead it a few times.
- Roll the dough out to about 1/2 inch thick and cut it into rounds using a biscuit cutter or a glass.
- Place the rounds on a baking sheet and bake for 12-15 minutes, or until lightly golden.
- Meanwhile, in a separate bowl, mix together the sliced strawberries and 2 tablespoons of sugar. Let the mixture sit for about 10 minutes.
- Split each biscuit in half and spoon the sugary strawberries and their juice over the bottom half.
- Replace the top of the biscuit, and finish with a dollop of whipped cream (optional).
