Instructions
Preheat the oven to 425°F.
In a large bowl, mix together the flour, baking powder, 2 tablespoons of sugar, and salt.
Cut in the butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Add the heavy cream and vanilla extract and mix until just combined.
Turn the dough out onto a floured surface and gently knead it a few times.
Roll the dough out to about 1/2 inch thick and cut it into rounds using a biscuit cutter or a glass.
Place the rounds on a baking sheet and bake for 12-15 minutes, or until lightly golden.
Meanwhile, in a separate bowl, mix together the sliced strawberries and 2 tablespoons of sugar. Let the mixture sit for about 10 minutes.
Split each biscuit in half and spoon the sugary strawberries and their juice over the bottom half.
Replace the top of the biscuit, and finish with a dollop of whipped cream (optional).
