Strawberry Short Cake

Ingredients
  

  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • 2 tbs Sugar
  • 1/2 tsp Salt
  • 1/2 cup Unsalted Butter, Cut into small pieces
  • 2/3 cup Heavy Cream
  • 1 tsp Vanilla Extract
  • 2 pints Strawberries sliced
  • 2 tbsp Sugar
  • Whipped Cream (optional)

Instructions
 

  • Preheat the oven to 425°F.
  • In a large bowl, mix together the flour, baking powder, 2 tablespoons of sugar, and salt.
  • Cut in the butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Add the heavy cream and vanilla extract and mix until just combined.
  • Turn the dough out onto a floured surface and gently knead it a few times.
  • Roll the dough out to about 1/2 inch thick and cut it into rounds using a biscuit cutter or a glass.
  • Place the rounds on a baking sheet and bake for 12-15 minutes, or until lightly golden.
  • Meanwhile, in a separate bowl, mix together the sliced strawberries and 2 tablespoons of sugar. Let the mixture sit for about 10 minutes.
  • Split each biscuit in half and spoon the sugary strawberries and their juice over the bottom half.
  • Replace the top of the biscuit, and finish with a dollop of whipped cream (optional).
