Authentic Argentinian Empanadas

My mother was an immigrant from Argentina. She migrated when she was 30 years old to Texas where she met my dad and got married. In her own words, she was a terrible cook because in Argentina her parents had employed a cook and she never learned how to cook. However, over the years she became a proficient and even a great cook. She very quickly acclimatized herself to American culture and was all about the American food diet. As children, we visited Argentina several times and I remember loving the food. While traditionally Argentina is all about beef and asados they do love their empanadas. Other Hispanic cultures have empanadas but I haven’t come across any other Hispanic culture that makes empanadas like Argentina.

When it comes to Argentinian food they don’t do anything spicy. It is a misnomer that all Hispanic countries are about the spice. Argentina’s food is rich with flavor and they also don’t have tortillas. Below is my family’s recipe for empanadas that my mother made several times as children. They tend to add sugar to their meat to make it a sweeter flavor but I love it without sugar. Also, I have to caveat this by saying my mother’s complaint that she didn’t make this often was because she couldn’t find the dough discs pre-made like she could in Argentina. I have successfully found them in Mexican markets but I put the recipe for how to make them on your own if you don’t want to go buy them somewhere.

Argentine Empanadas

Equipment

  • 1 Large bowl
  • 1 Skillet
  • 1 Cutting Board
  • 1 Knife
  • 1 Spatula

Ingredients
  

  • 3 Cups all-purpose flour
  • 1 tsp salt
  • 1 Cup unsalted butter, cold and cut into small pieces
  • 1/2-3/4 Cups cold water

Filling

  • 1 LB ground beef
  • 1 large onion, finely chopped
  • 2 hard-boiled eggs, chopped
  • 1 Cups green olives, pitted and chopped
  • 1/4 Cup raisins (Optional)
  • 2 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, mix the flour and salt.
  • Add the cold butter pieces and use your fingers to crumble the butter into the flour until it resembles coarse crumbs.
  • Gradually add cold water, a little at a time, and mix until the dough comes together. Be careful not to overmix.
  • Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling:

  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onion to the skillet and cook until softened.
  • Stir in cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes.
  • Remove the skillet from heat and let the mixture cool.
  • Once cooled, stir in chopped hard-boiled eggs, olives, and raisins.

Assemble the Empanadas:

  • Preheat your oven to 375°F (190°C).
  • Roll out the chilled dough on a floured surface to about 1/8 inch thickness.
  • Use a round cutter or a small plate to cut circles in the dough.
  • Place a spoonful of the meat filling in the center of each dough circle.
  • Fold the dough in half over the filling to create a half-moon shape. Press the edges to seal.
  • You can use a fork to crimp the edges for a decorative touch.

Baking:

  • Place the assembled empanadas on a baking sheet lined with parchment paper.
  • Bake for about 20-25 minutes or until the crust is golden brown.
  • Allow the empanadas to cool for a few minutes before serving.

Notes

These are very traditional Argentinian empanadas. They are great for dinner or lunch and they are always good as a snack. Many times they are better the next day and can easily be a go-to food when you are on the run.

Don’t focus on the big dream once you have written it down it is out of your brain just take the first step. Sometimes we can get overwhelmed by the bigger things we want in life but if you break it down into managable steps it can be less stressful and it can be more actionable.

2. Prioritize and Break Down Goals:

Single moms have a full plate, so it’s essential to prioritize objectives. Break down larger goals into smaller, manageable tasks. This approach helps prevent overwhelm and allows for steady progress. When you are going after a goal set into motion a plan that requires small steps everyday that you can take so that you can achieve that goal. Make sure you include a reward system along the way so that you have small dopamine hits for your body to celebrate the small achievements you have made. For example if you have a financial goal this year to save up a certain amount of money every time you deposit money in your savings account reward your self with something that won’t take away from your goal. Positive reinforcement will help you to stay on track especially when things get harder to do.

3. Create a Realistic Timeline:

Understand that achieving goals takes time. Set realistic deadlines, considering your daily routine and commitments. Flexibility is key; adjustments can be made without compromising the end objective. It can be hard to find time when you are a single parent to go after your goals but there is time. If you look at all the ways your spend your time each day find the places where you waste your time. Many times if we are honest with ourselves we will find that we waste so much time throughout the day on our phones or being distracted by things that won’t build into our futures. There is freedom on the other side of self control. If you can have self-control in certain areas you will find that in time you with have your goals accomplished because that time that you would have wasted is now spent focused on your dreams.

Strategies for Staying Motivated:

1. Cultivate a Supportive Network:

Surround yourself with individuals who offer encouragement and support. Whether it’s friends, family, or fellow single parents, their backing can uplift and motivate you on your journey. Many times in the persute of our goals and dreams we can hit walls that are almost impossible to get past. One way that can help is sleep on it. We often forget as sinlge mothers that we aren’t machines that can run non-stop. There are times we have to stop and rest and pour back into our own bodies. Eat a good meal, take a good nap, and rest in a bath or call a friend. Having people around you that hold you accountable to your dreams will also help to get you back on track. Find people who see you and what you are wantinging to do and will support you through your ups and downs.

2. Celebrate Milestones:

Acknowledge and celebrate every accomplishment, no matter how small. Rewarding yourself for reaching milestones reinforces positive behavior and fuels further progress. As we talked about earlier in this article positive reinforcment gives you a dopamine hit to your brain. When your brain experiences pleasure from an activity you will be more likely to do it again. The more you want to grow and go after your dream find ways to reward your self that won’t put you behind in your goals. For example if your goal is to lose weight and get healthy don’t choose to eat a whole cake after losing a few pounds. Instead take a bath or watch a movie. Find something that still protects your goals but activates that reward center.

3. Practice Self-Compassion:

Understand that setbacks are a part of any journey. Be kind to yourself during challenging times. Use setbacks as learning opportunities and re-adjust your approach if needed. In life we will always hit moments where we feel like we have failed. In that moment of failure we will find out what we are made of. Take a moment to regroup and grieve the loss then take a look at what you do have and re-adjust. Sometimes the setbacks can bring us into a new perspective that we have never seen before. It’s ok to take a step back and reasses what you need to do. Have compassion on yourself throughout the process because we all have moments where we hit a wall.

Efficient time management is crucial. Utilize planners, apps, or calendars to schedule tasks effectively. Allocate specific time blocks for goal-related activities amidst your parenting and work responsibilities. At the beginning on the week it’s important to get as organized as possible. If you have the ability to on the weekends set out a plan for the week it can help to maximize your time. Don’t forget to add enough moments of play and rest. These are vital for energy replinishment as well as it helps with the creative processes.

2. Delegate and Seek Assistance:

Don’t hesitate to seek help when needed. Whether it’s asking for support from family members, hiring childcare, or collaborating with others, delegating tasks can free up time for goal pursuit. A secret to growth is to know what you are worth. If you can out source a task that will take up time go for it. Spending money for someone to do your laundry can free you to make money or go after a dream while that task is being done for you. There are many creative ways to delegate to free up more of your time for the things that will help build your future. Find ways to cut back on you spending your time on menial tasks and focus on growing your dreams.

3. Flexibility and Adaptability:

Life as a single mom can be unpredictable. Embrace adaptability and adjust your plans as circumstances change. It’s okay to modify goals if they no longer align with your current situation. As single parents you are the only one often times managing all of the things in the household. Anything can come up at anytime and so it can be hard to go after dreams but don’t give up. After the crisis passes keep going after your dream.

Delicious Oreo Ice Cream Cake

As a tradition in my family, I make all the birthday cakes for all the children and adults who request them. I love baking all of their cakes from scratch and I make sure that they get the flavors and colors that they all want. This year my 13-year-old nephew requested an ice cream cake. I had never made one before but I’m always up for a culinary challenge. Since my nephew is constantly eating Oreos and ice cream I thought why not make an ice cream Oreo cake for him?

Turns out it was a giant hit! He loved it and wanted to eat it all. Unfortunately, I took it home and accidentally left it in the back seat of my car. I will have to redo it again next year. This recipe is quite a simple one and really is an easy make for any kid’s birthday! Enjoy!

Delicious Oreo Ice Cream Cake

Equipment

  • 1 Food Processor or Plastic Bag
  • 1 Spring Form Pan or Regular Pan
  • Parchment paper
  • Plastic Wrap or Aluminum Foil
  • 1 Spoon or Spatula

Ingredients
  

  • 24 Oreo Cookies (Crushed)
  • 1/4 Cup Unsalted Butter(Melted)
  • 1.5 Quarts Vanilla Ice Cream (or any flavor you prefer)
  • 1 Cup crushed Oreo cookies (for layering)
  • 1 Cup whipped cream or whipped topping
  • Chocolate sauce or hot fudge (optional for topping)

Instructions
 

  • Take 24 Oreo cookies and crush them into fine crumbs. You can use a food processor or place the cookies in a plastic bag and crush them with a rolling pin. Mix the crushed cookies with melted butter until well combined.
  • Press the crushed Oreo mixture into the bottom of a 9-inch springform pan or a regular cake pan lined with parchment paper. Press it firmly to form an even crust. Place the pan in the freezer for about 15-20 minutes to set.
  • While the crust is setting, allow the ice cream to soften at room temperature for a few minutes until it's easy to spread but not completely melted.
  • Take the pan out of the freezer and spread half of the softened ice cream over the Oreo crust layer. Sprinkle a cup of crushed Oreo cookies evenly over the ice cream layer.
  • Spread the remaining ice cream on top of the crushed Oreo layer, creating an even layer.
  • Cover the pan with plastic wrap or aluminum foil and freeze the cake for at least 4 hours or until firm.
  • Before serving, take the cake out of the freezer and let it sit at room temperature for a few minutes to make it easier to slice.
  • Once ready to serve, carefully remove the cake from the pan. You can run a warm, damp cloth around the edges of a springform pan to help release the cake.
  • Top the Oreo ice cream cake with whipped cream or whipped topping. Optionally, drizzle chocolate sauce or hot fudge over the cake for an extra decadent touch.
  • Slice and serve the delicious Oreo ice cream cake immediately.

I made this for my nephew’s 13th birthday and he loved it! There’s nothing a teen boy loves more than icecream and Oreos so why not put those together?

Grandmas Banana Bread

I’ve been trying to capture some of my mother’s old recipes since she passed. Since my sister got this handwritten recipe from my mother I haven’t had the opportunity until now to capture this recipe and convert it to a blog post. In a way this will be a memorial to my mother for all the time she disliked cooking but did it anyway to feed her family.

This recipe reminds me of simpler times when you just grabbed a cup of coffee sat at the table and enjoyed the warmth of the freshly baked banana bread with some butter. For those days when comfort is needed, this is a great addition to any breakfast table. Enjoy!

Grandmas Banana Bread

Course Breakfast
Cuisine American

Equipment

  • 1 bowl
  • 1 spoon
  • 1 Loaf Pan
  • 1 Measuring Cups
  • 1 Tablespoons and Teaspoons

Ingredients
  

  • 3 Ripe Bananas
  • 2 Eggs well beaten
  • 1/2 cup Butter
  • 2 cups Flour
  • 1 cup Sugar
  • 1 tsp Salt
  • 2 tsp Vanilla
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 cup Coursely chopped walnuts (optional)
  • 1/2 cup Chocolate chips (optional)

Instructions
 

  • Grease loaf pan
  • Mix the bananas and eggs in a large bowl.
  • Sift in flour, sugar, salt, baking powder, and baking soda.
  • Mix all the ingredients until the batter is well combined.
  • This part is optional if you want to mix in walnuts or chocolate chips you can but it's up to you.
  • Bake at 360° for an hour and 15 minutes.
  • Check for doneness with a tooth pick when it comes out clean.
  • Allow time to cool a little but you can eat it warm with a slab of butter.

Notes

This banana bread is a great recipe to have when you have leftover mushy bananas and need to get rid of them quickly. If you want to make it friendly add the chocolate chips. Enjoy this with a great cup of coffee for breakfast!

One fun idea is if you have other single mom friends switch kids for a shopping trip and have the children pick out Christmas presents for their mom while your children are picking presents out for you. This ensures that you get something on Christmas morning and helps your children think about giving back during this holiday season.

Spreading Cheer and Gratitude

Teach your children the beauty of giving by engaging in acts of kindness. Whether it’s volunteering together, writing thank-you notes, or donating toys, instilling a sense of gratitude and generosity can be incredibly rewarding. As a single parent sometimes you can feel the pressure of the season to “keep up with the Joneses” However if you remember the reason for the season it helps cut down the competition of the holiday and refocuses us on the most important things. Help your children get in the spirit of the season by talking about how they feel when they give. Many organizations are open to donations during the holiday season. Have your children choose one and talk about what you want to give together to create a sense of ownership.

Spiced Bourbon Holiday Cake

Whenever I bake a cake I always think of the box cakes my mother made growing up. They were usually dry and the frosting with store-bought as well too heavy and overall not very good. Being in a larger family with lots of kiddos my goal is to make the best-tasting cakes usually ones they can customize with colors and themes. None…I mean none of my cakes are dry or from a box. Why you may ask well because I want them to remember how much they enjoyed their birthday season. This bourbon cake was my first foray into alcohol-based desserts and it’s a celebration of my brother-in-law and his love of a good bourbon. He’s not much or a dessert guy and isn’t into anything too sweet so this was a perfect blend of light sweetness and the beautiful smokey flavor of the bourbon.

While I was baking this I added a few more tablespoons of bourbon to the glaze because well why not 😏. The cake was a success and everyone enjoyed it even my brother-in-law said he loved it so give it a try you can’t go wrong.

Bourbon Spice Holiday Cake

Equipment

  • 1 Stand Mixer
  • 1 Mixing Bowl
  • 1 Wisk
  • 1 Bundt Pan (buttered/oiled)
  • 1 Tooth Pick

Ingredients
  

  • 1 1/2 Cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/4 tsp Ground Cloves
  • 1/2 cup Unsalted Butter (soften)
  • 1 cup Granulated Sugar
  • 2 Large Eggs
  • 1/2 cup Sour Cream
  • 1/4 cup Bourbon
  • 1 tsp Vanilla Extract

Bourbon Glaze

  • 1 cup Powdered Sugar
  • 2-3 tbsp Bourbon

For Garnish (optional)

  • Chopped nuts (pecans, walnuts) or dried fruits
  • Whipped cream or vanilla ice cream

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch bundt pan.
  • In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy using a hand mixer or a stand mixer.
  • Add the eggs one at a time, mixing well after each addition. Then, mix in the sour cream, bourbon, and vanilla extract until well combined.
  • Gradually add the dry ingredients mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Pour the batter into the prepared bundt pan and spread it evenly.
  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • While the cake is baking, prepare the bourbon glaze. In a small bowl, whisk together the powdered sugar and bourbon until you achieve a smooth glaze consistency. Adjust the amount of bourbon to reach your desired thickness.
  • Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10-15 minutes. Then, carefully transfer the cake onto a wire rack to cool completely.
  • Once the cake has cooled, drizzle the bourbon glaze over the top of the cake. Allow the glaze to set for a few minutes.
  • Optionally, garnish the cake with chopped nuts or dried fruits. Serve slices of the spiced bourbon holiday cake with whipped cream or vanilla ice cream if desired.

Cranberry Sauce From Scratch

During the holiday season, as the family gets together it’s always fun to celebrate the holidays with traditional food. While we all love the canned cranberry sauce it’s fun to make it from scratch from time to time. Enjoy this simple and easy-to-make recipe!

Cranberry Sauce from Scratch

  • 1 Sauce Pan
  • Measuring Cups
  • 1 Wooden Spoon

Ingredients
  

  • 12 oz (about 3 cups) fresh cranberries
  • 1 cup granulated sugar
  • 1 cup water
  • Zest of 1 orange (optional)
  • 1/2 cup Juice of 1 orange (optional)
  • 1 Cinnamon stick or a pinch of ground cinnamon (optional)

Instructions
 

  • Prepare the Cranberries: Rinse the cranberries under running water and discard any soft or mushy ones. Set aside.
  • Combine Ingredients in a Saucepan: In a medium saucepan, combine the water and sugar. Stir over medium heat until the sugar dissolves completely.
  • Add Cranberries and Flavorings: Add the cranberries to the saucepan. If using, add the orange zest, orange juice, and cinnamon at this point. Stir to combine.
  • Simmer: Bring the mixture to a gentle boil, then reduce the heat to medium-low. Let the cranberries simmer, stirring occasionally, for about 10-15 minutes. The cranberries will burst and the mixture will thicken.
  • Adjust Consistency and Flavor: Taste the cranberry sauce. If you prefer it sweeter, you can add more sugar to taste. If it's too tart, add a bit more sugar. For extra flavor, adjust by adding more orange zest, juice, or cinnamon, based on your preference.
  • Cool and Serve: Once the sauce has reached your desired consistency and flavor, remove it from the heat. The sauce will continue to thicken as it cools. Transfer it to a bowl or airtight container and let it cool to room temperature. Then refrigerate until ready to serve.
  • Optional Step: If you prefer a smoother sauce, you can use an immersion blender or regular blender to puree the cranberry sauce once it has cooled slightly. Be cautious when blending hot liquids.
